Delish dinner tonight 😋 I’ve been loving the @sweetpotatosoul recipe for lentil loaf and this is my third time making it. I switch it up a little by using 1 1/2 cups of lentils instead of 1 cup, and I add ground sage, vegan worcestershire sauce & ground fennel for more of a meaty flavour...it’s all in the seasoning y’all! I also made an organic ketchup x coconut aminos sauce on top instead of using ketchup x balsamic. Meatloaf was one of my fave dishes before I went vegan and this recipe is a great meatloaf fake out. 🥕🍄🧅🧄It has great ingredients too: walnuts, ground flax, mushroom, grated carrots, onion and celery and of course the protein packed - fiber rich green lentils! I paired it with simple roasted veggies: russet potatoes, red onion, carrot and some whole garlic cloves (I like to mash them into the potatoes when it’s all done lol). 🌿I also made some sautéed kale, garlic and onion with my fave seasoning from Trader Joe’s, the Smoked South African blend. I love the Ancient Grains chips from Sprouts, they make for a perfect sturdy chip! 😋 ***If you’re omitting grains from your diet, you can use baked potato wedges or slice them into thin chips and bake them. Too much spicy food can aggravate #eczema so you can easily omit the spices and keep this dish very mild. 🥔🥕Cheeze sauce: simply blend boiled potatoes and carrots with ground chipotle powder, salt, garlic and onion powder, soaked cashews, nutritional yeast and veg broth, then heat up on the stove (sensitive to nuts? Just omit it. You can also make this sauce with butternut squash).

💚When I received this #eczemahealing report last week, it really made my day! A father of a 1 1/2 year old boy healing from eczema reached out to me at the end of September desperately needing support. 🥞Every once in awhile I love to have a nice huge stack of pancakes 🤤 I was out of spelt flour & used what I had available which was chickpea flour AKA gram flour, besan & garbanzo bean flour. I love to use this flour for savoury dishes, but it works perfectly for pancakes & waffles as well. Chickpeas are a great source of nutrition as it contains high amounts of iron, potassium, magnesium, protein, folate, copper, fiber & manganese. It’s a super cheap flour to buy as well, I usually get the Bobs Red Mill brand. This is the super easy & quick recipe I found online (I doubled it to feed my family): 🔘3/4c non-dairy milk (I used organic non sweetened almond)🔘1tsp baking powder🔘1c chickpea flour🔘1tsp apple cider vinegar🔘dash of pink salt. I added some organic coconut sugar to the mix, frozen wild blueberries, and these spices: cinnamon, clove, nutmeg & ginger. Simply mix all the ingredients & cook on medium high. I used a little bit of grapeseed oil as it’s a high heat oil (high smoke point) & won’t go carcinogenic. Avocado oil is another high heat oil. You can also do these oil free with a good pan. I don’t cook with oils too much but once in awhile I’ll use a little bit.
